MDM MEAT / Mechanically Separated Poultry Meat (MAKE)

Mechanically stripped meat (MDM) is the residual meat separated from the poultry carcass or animal bones by pressure or shearing force. Mechanically separated meat is a good source for closing the animal protein gap due to its economic nature. In recent years, MAKE production and use have become increasingly widespread in our country, as in other countries. Determining the stability and improving the product quality in these meats is very important and essential, the process should be carried out at certain temperatures and in a sterile environment. 

According to the Turkish Food Codex, in products that are mechanically stripped meat, the product label should state "Mechanically separated Contains ……… meat." The expression is in the same percentage as the product name and at least 2/3 of the size of the product name.
